This is Osekkai’s original kohakutou, developed through a collaboration between food designer Ai Horikawa and Kyoto confectioner Wataru Kanaya (Kanaya Wataru).
SORA AI / Sky sign: The state of the sky. Sky conditions. The course of events.
We expressed the changing sky at different times of day using “kohakuto,” a traditional Japanese confection made from sugar and agar.
5:00: Dawn, the sky gently lightening
9:00: Early morning, soft clouds floating in a clear blue sky
18:00: Dusk—watching the sun sink and slowly melt into the darkness
23:00: At night, stars twinkle in a sky spanned by the Milky Way (or a deep indigo sky)
The beautiful hues that vary by product are extracted from natural ingredients without using artificial coloring. Of course, each one also has its own distinct flavor.
Crisp on the outside and as soft as agar jelly on the inside, this treat offers a delightful contrast in textures.

While studying graphic design at an art university during my student days, I started sharing mainly confectionery photos on social media.
After working as a creative director at a lifestyle media company, became independent in 2021.
Founded Vail Inc., mainly engaged in food styling, photography, and product production.
