This is Osekkai’s original kohakuto, developed through a collaboration between food designer Ai Horikawa and Kyoto confectionery artisan Wataru Kanaya (Kanaya Wataru).
SORA AI / sora-ai: the state of the sky. Sky conditions. The course of events.
We expressed the sky’s changing colors throughout the day using “kohakutou,” a traditional Japanese confection made from sugar and agar.
5:00: Dawn, the gentle whitening of the sky
9:00: Early morning, soft clouds floating in a clear blue sky
18:00: Dusk, the sun setting and slowly dissolving into the darkness
23:00: At night, stars twinkle in a night sky spanned by the Milky Way (or a deep indigo sky)
The beautiful hues that vary by product are extracted from natural materials without using artificial colorings. Of course, each flavor also has its own distinct characteristics.
Crispy on the outside and softly jelly-like on the inside, like agar jelly—this treat also delights with its contrasting textures.
A simple yet somehow warm package design evokes the scene of gazing up at the sky through a window from indoors.
With four types of different rooms and sky colors, collecting is even more fun.

Amber sugar is a traditional Japanese sweet known for its texture: crisp on the outside and jiggly on the inside.
By making the surrounding crystalline part as thin as possible, it results in a lighter, more delicate mouthfeel.

Food designer.
While studying graphic design at an art university during my student years, I began sharing mainly confectionery photos on social media.
After working as a creative director at a lifestyle media outlet, became independent in 2021.
Founded Vail Co., Ltd., primarily engaged in food styling, photography, and product production.
We also handle travel media operations and interior design, among other things.

Wagashi Artisan Wataru Kanaya
Kyogashi artisan Kanaya Masahiro, 6th generation. While preserving the traditional Kyogashi passed down through the generations, he continues to take on new creative challenges.
